DOUGH
4cSelf-rising flour
1/2cButter
1cMilk
TOPPING
1 1/4cChopped cooked chicken
1 Green bell pepper, seeded and sliced
1/4cCanned corn, drained
3/4cPeeled, cored and diced fresh pineapple
1 Banana, thinly sliced
2ozMozzarella cheese, sliced
SAUCE
1tbButter
2tbFlour
1cMilk
1/4cFreshly grated cheddar cheese
1tbChopped fresh tarragon
  Salt and pepper

To make the dough, sift the flour and a pinch of salt into a bowl. Rub in the butter until the mixture resembles bread crumbs. Make a well in the center, then add the milk and bring together to form a smooth dough. Roll out into an 8" round on a lightly floured surface. Place on a greased baking sheet.

Preheat the oven to 400øF. Melt the butter for the sauce, then add the flour and cook for 1 minute. Stir in the milk, cheese and tarragon. Season and bring to a boil, stirring constantly. Spoon onto the pizza base. Top with the remaining ingredients, and bake for 30 minutes, or until the cheese has melted. Serve with a green salad.
